Ballarat has shed its ‘old, cold and gold’ image to emerge as one of Victoria’s fastest growing getaway destinations with incredible food, wine and country charm. The latest jewel in the crown? Ballarat’s new 5 star luxury boutique, The Provincial Hotel, owned by Gorgi and Simon Coghlan.
Gorgi and her team of interior designers threw out the rule book when reimagining the design of this 1909 Victorian treasure, creating a playful and sophisticated boutique hotel that comprises of 14 suites as well as signature restaurant Lola.
With a bowerbird’s eye for beautiful things Gorgi has combined antique furniture, artwork, vintage objects and beautiful textiles, (including Anna Spiro fabrics) along with designs sourced from New York and Europe, to create a warmth that has guests feeling as though they are staying at their stylish best friends’ house.
Inspired by elegant hotel bistros in Europe Gorgi and Simon have created Lola, a sophisticated European influenced restaurant that will change the way Australians see in-house dining at hotels.
Lola, signature restaurant at The Provincial Hotel, is named after dancer, actor, courtesan Lola Montez one of Ballarat's most memorable goldfields characters.
Head Chef, Andre McLoughlin (former sous chef of Victoria’s most notable regional restaurants Jackalope and Royal Mail, Dunkeld), has designed a seasonally driven menu with a European influence, sourcing outstanding local produce from Ballarat’s most passionate producers including Tuki lamb, Sher Wagyu, Mushroom Connection. Dessert at Lola has gained a reputation as the best in Ballarat with Pastry Chef, Ramzi Abou Ali (Royal Mail, Dunkheld) creating a dessert menu that includes sophisticated sweets like quince pavlova of spiced quince, quince coulis, mascarpone crème, meringue, dehydrated yoghurt crisp or mandarin, yeast sponge, rum, burnt orange espuma, mandarin jam & compressed blood orange.
